Ashley has pulled out a few of my greatest hits from our recipe stash which led us to tonight's meal. I don't recall the last time I made this dish, but I do remember that Juliana liked the cauliflower rice. The ropa vieja on the other hand not so much. Juliana even had me serve the rice and meat in separate bowls. Once she finally got around to tasting the meat she began eating spoonfuls of the bowls together. The only modification I made to the recipe was reducing the cumin in the rice to only 1 teaspoon. And hey, turns out this dish is paleo if that's your thing.
