Ashley came through again on the recipe front. If she would've left it to me we would have eaten a boring (and probably bland) beef quinoa dish. She pulled this recipe out a few days ago and I decided to give it another shot for tonight's dinner.
The finished dish was a hit with the whole family with seconds requested by Juliana.
I searched for a red enchilada sauce with the least amount of ingredients and found Frontera to be the
perfect mix of taste with minimal ingredients.
